Roasted Radishes Combine Heart-Healthy with Savory

In November, we’re celebrating Radishes, our Harvest of the Month. Radishes are a good source of Vitamin B6 and folate, which promote a healthy cardiovascular system. This heart-healthy recipe for Roasted Radishes with Lemon and Dill combines this month’s veggie with delicious flavors to create a simple and savory dish. Click here to print the recipe.
Ingredients:
- 2 pounds fresh radishes, trimmed and halved vertically
- 2 tsp. olive oil
- 3/4 tsp. kosher salt
- 1/8 tsp. black pepper
- 1 tsp. fresh dill, minced
- 1/2 tsp. lemon zest
- 1/2 tsp. fresh lemon juice
- 1/2 tsp. garlic, minced
Directions: Preheat oven to 450 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, toss together radishes, oil, salt and pepper. Spread radishes on prepared baking sheets in a single layer, cut-sides down (it will be crowded); roast 10 minutes, stirring once and switching pan positions in oven after 5 minutes. Spoon radishes into a serving bowl and toss with dill, lemon zest, lemon juice and garlic; serve immediately.
Serves 6
