Curb Cravings by Snacking on Healthy Cinnamon Popcorn
So many of us start off the year with a goal to eat healthier, but we’re sidelined by cravings and a desire to snack.
Enter Coconut Cinnamon Popcorn–a flavorful snack that comes together in just 10 minutes with a handful of ingredients.
But this isn’t just a low-calorie treat. The addition of cinnamon–the January Harvest of the Month–brings lots of health benefits. Cinnamon has anti-inflammatory properties and is rich in antioxidants, and studies have shown that cinnamon can help lower LDL cholesterol and blood sugar.

Ingredients:
- 3 tbsp. coconut oil
- ½ cup popping corn
- 2 tbsp. almonds, sliced
- 2 tbsp. coconut, shredded
- 2 tsp. coconut sugar
- ¼ tsp. ground cinnamon
Directions:
- In large saucepan, heat 4 teaspoons coconut over medium heat. Add popcorn and cover with lid.
- Once popping starts, cook for another three minutes or until the popping stops, shaking pan occasionally. Pour in a large bowl.
- In small skillet, add almonds and shredded coconut over medium heat. Cook until lightly toasted, about 3 minutes, stirring regularly.
- Add almonds and coconut oil to popcorn, top with remaining coconut oil, coconut sugar and cinnamon. Stir or shake combine.
Serves 6
