Satisfy Your Sweet Tooth with a Nectarine Cookie Crisp

The word “nectarine” literally means sweet as nectar, and there’s no sweeter way to serve up nectarines than this recipe for Nectarine Cookie Crisp.

This easy dessert features nectarines–the May Harvest of the Month–and comes together quickly, and with all the many health benefits nectarine offer, you’ll have no guilt about satisfying that sweet tooth. Click here to print the recipe.

Ingredients:

  • 7 nectarines, thinly sliced (about 8 to 10 slices per nectarine)
  • 1/2 fl oz, almond flavored liquer
  • 7 Amaretti cookies, processed into fine crumbs
  • 5 tbsp. butter, melted

Directions: Preheat oven to 375 degrees. Place nectarines in an ungreased round baking dish; toss with liqueur. Spread nectarines into an even layer and top with cookie crumbs; drizzle melted butter over top. Bake until fruit bubbles, about 45 to 50 minutes. Allow to cool; serve either warm or cold. Yields 1 slice per serving.

Notes: You can use light butter in this recipe but we like the taste of regular butter better and decided that for 1½ teaspoons of butter per serving, it’s worth using the real thing.
