Create a Summertime Treat with Strawberry Rhubarb Crunch
Rhubarb–the July Harvest of the Month–is the perfect summertime treat because its sour taste pairs deliciously with some of our favorite summer fruits, like strawberries.
Rhubarb is most often found in desserts, especially pies and breads. Its tart and sour taste balances out the sweetness of many desserts. Click here to print the recipe.
Ingredients:
- 4 cups rhubarb, chopped
- 1 pint strawberries, sliced
- 1 tbsp. honey
- 1 cup rolled oats
- ½ cup brown sugar
- ¼ cup butter
- 1 tsp. cinnamon
Directions: Preheat oven to 350 degrees. In bowl, mix rhubarb, strawberries and honey together. Transfer to baking dish.
Using the same bowl, mix together oats, brown sugar and cinnamon. Mix in the butter until crumbly, and spread over top of fruit. Bake for approximately 35 minutes, or until rhubarb is soft and topping is crunchy. Best served warm!
