November’s Harvest of the Month is Yams

Yams have a candy-like flavor that might make us wonder, “Are they actually healthy?” Good news: They are! In fact, yams are so abundant with vitamins and nutrients that they’re considered a superfood.

Select yams that are smooth, evenly colored and free of soft spots. Yams will stay fresh for about two weeks when stored on the countertop away from moisture and direct sunlight.

If you’ve ever sat down for a holiday meal and had a heaping scoop of yams/sweet potatoes before the main course, you may have noticed how filling they are. The high fiber content in yams can satisfy our appetites while providing essential vitamins and minerals.

An easy way to introduce yams to kids is to substitute yams/sweet potatoes for regular potatoes in classic family favorites like mashed potatoes, roasted potatoes, oven-baked potatoes, and hash browns. Kids tend to enjoy the sugary taste of yams.
