February’s Harvest of the Month is Beets!
Just in time for heart month, beets are gathering recognition for their many excellent health benefits, including for your heart-health.
You may have noticed how beets are making their way into various food products such as juices, supplements, smoothie powders and chips.
The anti-inflammatory properties of beets are one of the main reasons why athletes and people with inflammatory conditions are including more beets in their meals. Beets are a great source of betalains and nitrates, both of which help decrease inflammation. Additionally, beets are rich in folate, a vitamin that can help prevent heart disease and stroke.
The best beets at the grocery store are firm, have crisp green leaves and are free of blemishes. To store the beets, trim the stems a couple of inches above the root, and then lay them between paper towels in the refrigerator’s crisper drawer. The beets should last approximately three weeks when stored properly.
