And it’s not just a tasty serving dish! Eating romaine lettuce is a great way to get an array of vitamins and minerals, including calcium, phosphorus and vitamin K.
Ingredients:
- 2 tsp. olive oil
- 1½ cups corn, frozen
- Chili powder, to taste
- ¼ cup soy sauce
- 6 romaine lettuce hearts
- 2 avocados, sliced
- 1 tsp. balsamic vinegar (optional)
Directions: Heat olive oil in a nonstick skillet over medium-high heat. Add corn, chili powder and soy sauce, and cook until most of the liquid is gone. Turn off heat and add balsamic, if desired. Put mixture into romaine hearts and add avocado. Roll up and enjoy!
