Ingredients:
- 4 medium sweet potatoes
- 1 can (15 oz.) black beans, rinsed and drained
- ¼ cup crumbled feta
- ¼ cup roasted red peppers
- 3 tbsp. extra-virgin olive oil
- 3 tbsp. finely chopped parsley
- ¼ tsp. salt
Directions:
Preheat oven to 400 degrees.
Using a fork, poke holes all over sweet potato. In a microwave safe dish, microwave potatoes for 10 minutes or until easily pierced. While potatoes are in microwave, combine beans, feta, peppers, olive oil, parsley and salt.
Cut potatoes in half and fluff insides with fork. Add bean mixture to each half, packing to fit.
Bake for approximately 10 minutes, until beans are hot.
Serves 8
